Hexagonal cakes may not be the most common of cake tiers, but having been asked if I could create hexagonal ganache discs by several of my students, how could I not add them to the range.

 

Hexagonal cakes can cause a few issues. Cake tins and cake dummy tiers are measured point to point on the diagonal across the hexagon. Whereas, cake boards and drums are measured straight side to straight side. I decided that I would take lead from the cake tins and go with a measurement of point to point.

 

If you are not sure which size you need to get, draw a circle the size of the tier you think you need. Inside that draw a hexagon with its points touching the circle, see example template in images. You can then see if tour tier above or below will fit.

 

Specifics:

Ganache discs are sold as SINGLE discs; they have been designed with my combination ganache method in mind which uses a disc, a ProFroster and a super tall cake scraper.

 

All ganache discs are 0.25" wider than the diameter of the cake; for example if you have a 6" cake select the 6" disc which will measure 6.25". The additional width allows for an even layer of ganache to go all around the cake.

 

Ganache discs are 3mm thick, making them good and sturdy.
